Healthy Vegan Breakfast Idea Recipes

I'm a little too excited to share this post with you guys!
Breakfast is my favorite meal because I think it's the most fun meal to prepare.

Lunch sucks because it's in the middle of the day and we're busy.
Dinner sucks too because it's the end of the night and we're tired.
BUT breakfast on the other hand is a fun way to start the day off on the right foot.

plus depending on the food you choose, it can be a super colorful experience.

Below you will find the recipes along with exact measurements you will need...

Oatmeal Medley:

you will need-
- oatmeal of your choice, my current fave is the Trader Joe's Quinoa Steel Cut Oatmeal
- handful of raspberries
- handful of Naturebox Cranberry Medley

Waffles & Berries (NOT VEGAN):

you will need-
- handful of Naturebox Mini Belgian Waffles
- handful of blueberries
- handful of strawberries
- maple agave syrup 

Fig & Date Green Juice:

you will need- 
- 1 frozen banana
- 1 stalk of celery
- 1/4 of a cucumber
- a handful of Naturebox Fancy Dried Figs
- a handful of Naturebox Mini Medjools (dates)
- 2 big handfuls of spinach
- 1 cup of almond milk
- 1 tbsp of chia seeds
- a dash of cinnamon 
- a 1/2 inch of vanilla bean (or a splash of vanilla extract)

 Blueberry Banana Pancakes:

you will need- 
- 1 ripe banana
- 2/3 cup of almond milk
- 1 tsp of vanilla
- 3/4 cup gluten free baking flour 
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- a dash of salt (i used pink himalayan salt)
- a handful of blueberries (to cook inside and then another handful to sprinkle on top)
- olive oil for the pan so the pancakes don't stick
- maple syrup to serve 

Naturebox:

- Big Island Pineapple (perfect any time of the day snack)
- Mini Medjools (dates are great to eat alone or blend in smoothies)
- Fancy Dried Figs (add sweetness to any smoothie with some figs)
- Mini Belgian Waffles (THESE ARE NOT VEGAN)
- Cranberry Medley
